11/18/2023 0 Comments Mexican vanilla cake![]() ![]() You could always tell when the bread was fresh because as you got closer to the panadería the sweet smell of warm sugar, cinnamon, and anise would be so intoxicating, that it would pull you right in. I was fortunate to grow up across the street from a panadería, so my mom, dad and I would often find ourselves walking over a few times during the week for conchas, bolillos, and empanadas and a slice of pastelito fresh out of the oven that we’d accompany with an ice cold Mexican Coke before settling in for the night. In a sea of golden bollillos, brown cuernitos and white conchas, the hot pink slices of cortadillo always stood out to me and I think that’s why I loved it so much. It is a moist and very very fluffy yellow sheet cake that melts in your mouth, topped with a hot pink icing (sometimes white) and rainbow nonpareils. If you’ve ever visited a panadería, chances are, you’re probably seen cortadillo before. But don’t worry, we’ll talk through it! It’s not that anything is particularly hard, I just want to make some important notes/highlights for you.Because it’s Friday, I thought it would be nice to end the week on a sweet note, so today I’m sharing a recipe for cortadillo, also known as Mexican pink cake and Pastel de Niños. ![]() You know how earlier I said buttercream is usually made w/ 3 ingredients? Well, this variety is also made w/ 5 ingredients but instead of powdered sugar, we are using sweetened condensed milk! Most simple recipes are indeed simple, but there’s also a little bit of pressure bc the recipe may be a little less forgiving. So if you look at the origins of Lechera, which isn’t called Lechera, that’s just the brand (habit, ya know?) sweetened condensed milk originates from France but I relate sweetened condensed milk w/ Mexican flavors because my grandmother, aunts, & mom used it very often in Mexican bakes or desserts. Whether that’s by sharing traditional Mexican dishes just as my parents taught me or by putting a spin on classic “American” dishes, I want to try it! But really, what is American? That’s a whole different convo we don’t have to get into right at this second. One of my greatest hopes of this blog is to highlight Mexican food, ingredients, & flavors. But a Lechera, sweetened condensed milk buttercream? Now, that’s special. I will probably put out a simple vanilla buttercream in the near future but there are lots of those recipes online already. Combining these 3 ingredients gets you a buttercream frosting, for sure. ![]() Trust.īuttercream frosting for the most part is a few simple ingredients: powdered sugar, butter, vanilla. Actually, not any of my frosting recipes on here. Here are some of the things I am usually not a big fan about buttercream: It’s usually very easy to put together!. ![]() Doesn’t need to be in the refrigerator for 90% of its life.Can make more intricate decorations bc it’s much firmer.Can hold its shape under warm temperatures/sun.*shrug* My family always buys birthday cakes with the whipped cream frosting but that usually means you cannot have your cake displayed for too long bc the sad reality of whipped cream is that it will melt, fall apart, & ruin all your presentation hopes & dreams. I prefer a whipped cream frosting – always have & always will. Very excited to share all of these w/ you. On the other hand, there have been many times there is leftover frosting after a bake & we use it for all sorts of other things, bc it’s that good. NGL.Ī cake can be amazing, moist, very well balanced, but if the frosting isn’t good at all, then I would rather just scrape it off, save myself some guilt & let the cake shine all on its own. I think buttercream frosting has developed a bad rep in the past for me & I’m slowly trying to un-learn things (I feel like this is a common theme for the year 2020) bc things/people/recipes/classics deserve chances & a chance to be all they can be! Sometimes I realize I speak way too passionately about food/recipes/ingredients – so funny.īack to frosting, I am picky when it comes to frostings. You see, this one (& all future buttercream recipes that I post on here) are different. So you’re probably wondering why I’m dedicating a whole blog post to this buttercream recipe & future posts to come. I’m going to start this post by putting on record that I am not a huge buttercream fan. Ladies/gents/non binary friends, we are starting a frosting series on this blog. ![]()
